Daily Dish: New menu items for Southern Pressed Juicery

Zen Cauliflower Salad


Ingredients for Raw Sour Cream:


1 cup cashews (soaked and rinsed)

½ cup water

¼ cup lemon juice

½ teaspoon sea salt


  1. Blend all ingredients together in Vitamixer
  2. Yields 1 ¼ cup raw sour cream to garnish


Ingredients for Zen Dressing:


3 tbsp coconut oil

2 tbsp lemon juice

½ tsp turmeric

½ tsp sea salt

¼ tsp freshly ground pepper

pinch cayenne


Ingredients for Cauliflower Salad:


1 head cauliflower

½ cup finely chopped soaked cashews

6 dates

¼ cup chopped cilantro leaves

¼ cup chopped mint leaves

1 tbsp cacao nibs


  1. To prepare dates – soak 2-3 hours, drain, pit, finely chop
  2. Mix all ingredients together
  3. Dress and add raw sour cream and enjoy!
